Aunt Minnie's Apple Cake

This recipe has been passed down through four generations. It came from my Great Grandpa's girlfriend Minnie-what a wonderful woman. Since we are in Washington state this is perfect...for dessert, breakfast, after school snack, anytime. —MarieTSH

Ingredients
  • 2 cups sugar
  • 2 cups all purpose flour
  • 1 cup walnuts or pecans
  • 1 cup raisins
  • 4 cups chopped and peeled Granny Smith apples
  • 2 teaspoons cinnamon
  • 1/2 cup vegetable oil
  • 2 eggs
  • 2 teaspoons vanilla
  • 1/2 teaspoon cloves
  • 2 teaspoons baking soda
  • 1 tablespoon lemon zest
Directions
  1. Combine all ingredients together with spoon. (Will be stiff like cookie dough) Spread in greased 9 x 13 pan. Bake at 350* for 1 hour.
