Author Notes: This is a quick and dirty version of traditional tabbouleh which is traditonally made with bulgur wheat. But when you want a quick lunch ready in 5mins this is perfect. —thefoodcollective
cup cous cous
lots of parsley
handfuls of mint
tablespoons olive oil
juice of a lemon
- Boil 200ml water. Add to the cous cous in a bowl and cover for 5mins and then fluff up with a fork.
- Chop all the ingredients up into small chunks. Add to the cous cous. Mix the dressing up and pour over, mix well.
