This is a quick and dirty version of traditional tabbouleh which is traditonally made with bulgur wheat. But when you want a quick lunch ready in 5mins this is perfect. —thefoodcollective
Ingredients

1 cup
cous cous

20
cherry tomatoes

cucumber

spring onion

lots of parsley

a handfuls
of mint
- dressing

6 tablespoons
olive oil

1/2
juice of a lemon
Directions

Boil 200ml water. Add to the cous cous in a bowl and cover for 5mins and then fluff up with a fork.

Chop all the ingredients up into small chunks. Add to the cous cous. Mix the dressing up and pour over, mix well.
