Cous Cous Tabbouleh

This is a quick and dirty version of traditional tabbouleh which is traditonally made with bulgur wheat. But when you want a quick lunch ready in 5mins this is perfect. —thefoodcollective

Ingredients
  • 1 cup cous cous
  • 20 cherry tomatoes
  • 1 cucumber
  • 1 spring onion
  • lots of parsley
  • a handfuls of mint
  • dressing
  • 6 tablespoons olive oil
  • 1/2 juice of a lemon
Directions
  1. Boil 200ml water. Add to the cous cous in a bowl and cover for 5mins and then fluff up with a fork.
  2. Chop all the ingredients up into small chunks. Add to the cous cous. Mix the dressing up and pour over, mix well.
