Serves 4

  • 500 grams scad
  • 1 cup flour
  • 1 lemon
  • 4 garlic cloves
  • 3 cups cooking oil
  • 1/2 tablespoon salt
  1. Clean and wash the fish, leave to drain thoroughly. Sprinkle with salt.
  2. Coat each fish in flour.
  3. Heat the cooking oil. Fry the fish until crisp and golden.
  4. Drain on a metal rack or paper towel.
  5. Serve with garlic slices and a lemon crown.
