When you’re looking for a simple, speedy and deliciously flavoursome dish, this recipe is the perfect solution. Chicken souvlakis are gorgeous Greek kebabs and these are made with chicken and a roasted pepper hummus. It’s a no-fuss chicken dish served with warm wheat tortillas that takes just 10 minutes from start to finish. Ingredients
- For the Souvlakis

400 grams
chicken thighs, boneless, skinless

1/2 teaspoon
dried oregano

1/2 teaspoon
pepper

1/2 teaspoon
salt

30 milliliters
olive oil
-
15 milliliters
lemon juice

1 piece
Zest of 1 lemon

3 pieces
whole wheat tortillas (gluten-free optional)
- For the Hummus
-
100 grams
garbanzo beans/chickpeas (canned)

100 grams
roasted bell pepper

6 grams
garlic, crushed

30 milliliters
lemon juice
-
30 milliliters
olive oil
-
1/2 teaspoon
paprika

1/2 teaspoon
salt

1/2 teaspoon
pepper
Directions

Cut chicken thigh fillets into cubes.

In a bowl, combine olive oil, lemon juice, lemon zest, dried oregano, salt, and pepper. Add in chicken and toss thoroughly.

Thread chicken into skewers and cook in a grill pan on high heat for 4 minutes per side.

While chicken is cooking, prepare hummus. Add all ingredients to a food processor and pulse until smooth.

Serve with warm wheat tortillas.
