Ingredients
  • 1 1/2 cups red split lentils
  • 1 small onion
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon salt
  • 6 1/2 cups water
  • 1 teaspoon ground cumin
  • 1 teaspoon turmeric
  • 1/2 teaspoon black pepper
  • 1 pinch finely chopped parsley
  • 4 lemon wedges
Directions
  1. Rinse the lentils and drain.
  2. In a large pot, heat the olive oil and add the finely chopped onion and cook until it starts to soften.
  3. Add the drained lentils to the pot and stir for one minute. Then, add the water, salt, cumin, pepper and turmeric.
  4. Bring the ingredients to the boil and let simmer for 20 minutes before removing from the heat.
  5. Sprinkle the soup with finely chopped parsley and serve with a lemon wedge.
  6. Squeeze in the lemon just before eating.

So easy answer and quick to make, yet so delicious. I just added a little bit more salt and some garlic. Also, I mashed some of the lentils as I was stirring the soup. Thanks for the recipe.
