You'll get major cinnamon churro vibes from this crunchy sweet treat! These Cinnamon Sugar Pizzelles are so delicious and easy to make! Ingredients
  • 1 flax egg (1 tbsp flaxseed meal + 2.5 tbsp water)
  • 2 cups plant milk (oat, almond, coconut, rice, etc)
  • 3 cups gluten-free flour
  • 2 tablespoons cinnamon
  • 1/2 cup coconut sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 2 teaspoons pure vanilla extract
  • 1/2 cup vegan butter, melted
  • spray oil, such as coconut or avocado
  • 2 cups organic cane sugar
  • 4 teaspoons cinnamon
Directions
  1. Heat your pizzelle maker. While the pizzelle maker is warming up, make the flax egg by combining the flaxseed meal with water and letting it "gel" up.
  2. Next, add all of the other ingredients to a blender starting with the milk. Blend all ingredients until you achieve a pancake-like batter, the mixture should be thick, but if you need to, add another splash of milk.
  3. Add a tablespoon of batter for each pizzelle, close, and cook for about 2-3 minutes. ** NOTE: cooking time will vary depending on your pizzelle maker. Gently remove the pizzelles with a fork and lay them flat to cool, they will crisp up as they cool.
  4. Next, make the cinnamon sugar coating by combining the sugar and cinnamon in a large, shallow bowl. Stir until the cinnamon is mixed in with the sugar completely. Working with one pizzelle at a time, spray each side of the pizzelle with the spray oil and then coat on each side with cinnamon sugar.
  5. ** NOTE: store your pizzelles in a covered glass or tin container, not plastic, to keep them crunchy.
