whole anise

cinnamon

whole coriander

40 grams
cloves

20 grams
whole mace

20 grams
ground/powdered ginger

10 grams
whole fennel seeds

10 grams
whole allspice

whole vanilla beans
Directions

Process the whole spices in a spice grinder until you have a fine powder.
Scrape the vanilla out of its beans.

Mix with the ginger and the vanilla with the spice powder.
Store in a small, airtight container.
