Delicious. This is my 'signature dish' whenever I'm having people over for lunch or dinner. I've seriously lost count of the amount of times I've made it! It looks extra gorgeous with mixed baby carrots (purple, yellow and orange), and is lovely as part of a mezze-style meal with lamb or chicken, fresh pitas and a grainy salad.

Quickly went into my go-to recipes; mostly when pomegranates are in season. Notes for those allergic to tahini, sunflower seed butter is a great alternative!

Not great. Even though I was starving and on Whole30. The tahini sauce is somehow kind of dry and didn't do much for the carrots. Definitely chop the pistachios - I was lazy and didn't. Cilantro might add something to the dish, instead of parsley. 1
