Roasted endives with pears and blue cheese

Ingredients
  • 4 endives
  • 2 ripe pears
  • 1 tablespoon canola oil
  • 2 teaspoons sugar
  • 2 tablespoons Butter
  • 2 teaspoons lemon juice
  • 3/4 cup Blue Cheese
  • 1/2 cup walnuts or hazelnuts, coarsed
Directions
  1. Wash the pears and cut into slices. Cut the endives in half.
  2. Heat the oil in a pan and roast the pears on each side until soft (make sure they don't break though). Remove from heat. In another pan, melt the butter on low heat, add the sugar and let it caramelize. Add the endives, season with salt and pepper and cook on medium heat. Pour in the lemon juice to prevent them from burning.
  3. Place the endives and pears in an over dish. Sprinkle with blue cheese and bake in the oven for 15 minutes on 375 F. Garnish with the walnuts
