Classic Banana Bread with a little crunch. You can always tweak the sugar on this recipe, and it will not change the end product. I like to have some small chunks of banana to add texture, so don't over mashed it. —cynthiagunawan

What You'll Need
Ingredients
  • 115 grams Unsalted / Salted Butter (melted)
  • 50 grams Granulated Sugar
  • 250 grams All-Purpose Flour
  • 2 Eggs
  • 3 Banana
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • 1 tablespoon Vanilla Extract
  • Chia Seeds
  • Pumpkin Seeds
Directions
  1. Pre-heat oven at 380F. Butter and flour the loaf pan, or line it with parchment paper.
  2. Mashed the bananas and add vanilla extract, set aside.
  3. In another bowl, mix the flour, baking powder, baking soda, and a little bit of chia seeds.
  4. Whisk eggs, sugar & melted butter. Add in the mashed bananas, mix until fully incorporated.
  5. Pour the dry ingredients to the wet ingredients, fold it using a spatula.
  6. Pour & spread evenly on to 9 inch loaf pan. Add a generous amount of pumpkin & chia seeds on top.
  7. Bake for 40 minutes at 380 F and another 20 minutes on 365 F.
  8. Serve warm with salted caramel butter or cream cheese.

I'm confused as to where the butter comes into play in this recipe...? Is it just to prep the pan?

Hi!

So sorry I forgot to mention that the butter has to be melted and mixed together with eggs and sugar.
