Bananas, Chocolate, Peanut Butter, Oh My!

Ingredients
  • Filling
  • 4 ounces Cream cheese (softened)
  • 1/3 cup Granulated white sugar
  • 1 Large egg
  • 1/3 cup Peanut butter (smooth or chunky)
  • Bread batter
  • 1 cup Equals 3 Ripe bananas*
  • 1/2 cup Butter (melted)
  • 1 teaspoon Vanilla extract
  • 1 cup Granulated white sugar
  • 2 Large eggs
  • 1 cup All purpose white flour
  • 1/4 cup Dark cocoa powder
  • 1 teaspoon Baking soda
  • 1 cup Dark chocolate chips
  • *had only 2 bananas, added 1/4 C. Applesauce in place of 3rd banana
Directions
  1. Filling- beat cream cheese, peanut butter and sugar until smooth
  2. Add egg and beat until fully combined
  3. Place in refrigerator and make batter.
  4. Oven 350 degrees. Line 9 x 5 loaf pan with parchment paper Batter - mix flour, baking soda and cocoa powder.
  5. In a separate bowl, smash bananas until no lumps
  6. Mix in melted butter, vanilla, eggs, sugar.
  7. Add dry ingredients to wet ingredients and mix only until blended and flour is incorporated.
  8. Fold in chocolate chips.
  9. Add half the batter to loaf pan
  10. Spread all the filling over batter with offset spatula
  11. Cover with remaining batter and smooth evenly
  12. Bake for 1 hour and 10 minutes or until you inserted toothpick cnes out clean
  13. Cool completely; best if wrapped and refrigerated overnight.

Oh I forgot to mention - I didn't see in the instructions where the 1c of sugar is added to the batter. I assume it would be with the wet ingredients.

I wanted to try this ever since BerryBaby posted it on a hotline thread a while ago, and you can't go wrong with these flavors. I used thawed bananas that had been veeeeery ripe when I put them in the freezer so the banana came out well. I'd up the cocoa powder next time because I'd like an intense chocolatey flavor, but in general the banana+chocolate+peanut butter all came out nicely. I used whole wheat flour too, no problems. If you're one to eat your dessert for breakfast the next day, this cake works both ways! Finally, if anyone makes this and forgets to fold in the chocolate chips, and then decides to try to poke in as much chocolate into the top portion of the already assembled cake, and then sprinkle the rest on top towards the end of baking: know that it will turn out fine!
