this is a friend's recipe. perfected over time and served at many cocktail clubs. don't skimp on the pellet ice. it's key! —Emma King
Ingredients

4 pieces
meyer lemons

4 pieces
mint leaves

1 ounce
simple syrup

2-3 handfuls
pellet (Sonic-like) ice

2 ounces
bourbon, I prefer Bulleit or Larceny
Directions

Cut a meyer lemon in half, then quarter each half. (Remember 1 lemon = two drinks, but each drink should have four pieces.) Then, add 4 pieces of meyer lemons, 4-5 mint leaves and 1oz of simple syrup to a low ball glass. Muddle well, so lots of juice is expressed from lemons.

Mound pellet ice on top of muddled mixture. As high as you can get it!

Pour 2oz bourbon over the top of the ice. Stir 3-4 times with a bar spoon (this is why all of the ice is important... pellet ice melts quickly and you want some to melt and add water to increase the volume of the drink-that is on purpose)!

Garnish with mint (in our house, we call that an FA…a fancy accoutrement) ! Enjoy!
