Guacamole Skins is an effortless, on-the-go guac recipe, using a simple method of mixing: right in the skin. —The Jolly Hostess

What You'll Need
Ingredients
  • 2 avocados, pitted and smashed
  • 4 tablespoons pico de gallo, homemade or store bought
  • 4 tablespoons lime juice
  • 2 tablespoons cilantro, minced
  • 2 tablespoons garlic powder
  • dash salt and pepper
  • 4 cilantro leaves for topping
  • Pico de Gallo
  • 2 roma tomatoes, diced
  • 1 tablespoon red onion, minced
  • 1/2 tablespoon cilantro, minced
  • 1 small garlic clove, minced
  • 1 teaspoon lime juice
Directions
  1. Prep ingredients. Cut avocados in half and remove the pit. If making your own pico de gallo, mix all ingredients in a bowl and mix. Set aside.
  2. Starting with one half of an avocado, use a spoon and scoop the avocado so free from all edges. Press down so it is fully smushed (little messy!). Use a fork to fluff and mix, similar to a baked potato.
  3. Add 1 tbsp pico de gallo, 1 tbsp lime juice, 1/2 tbsp cilantro, 1 tsp garlic powder, dash salt and pepper. Mix until fully blended.
  4. Repeat with three other avocado halves. Top each with 1 cilantro leaf. Serve immediately with small tortilla chips. Tostitos Crispy Rounds are perfect.
