Ingredients
-
2
avocados, pitted and smashed
-
4 tablespoons
pico de gallo, homemade or store bought
-
4 tablespoons
lime juice
-
2 tablespoons
cilantro, minced
-
2 tablespoons
garlic powder
-
dash
salt and pepper
-
4
cilantro leaves for topping
- Pico de Gallo
-
2
roma tomatoes, diced
-
1 tablespoon
red onion, minced
-
1/2 tablespoon
cilantro, minced
-
1
small garlic clove, minced
-
1 teaspoon
lime juice
Directions
-
Prep ingredients. Cut avocados in half and remove the pit. If making your own pico de gallo, mix all ingredients in a bowl and mix. Set aside.
-
Starting with one half of an avocado, use a spoon and scoop the avocado so free from all edges. Press down so it is fully smushed (little messy!). Use a fork to fluff and mix, similar to a baked potato.
-
Add 1 tbsp pico de gallo, 1 tbsp lime juice, 1/2 tbsp cilantro, 1 tsp garlic powder, dash salt and pepper. Mix until fully blended.
-
Repeat with three other avocado halves. Top each with 1 cilantro leaf. Serve immediately with small tortilla chips. Tostitos Crispy Rounds are perfect.
