Banana Mango Square Bites

This recipe is targeted to eating healthy desserts with fresh ingredients and flavorful components. It includes bananas as the main ingredient with mango for color, mint for great aroma and lots more goodies. I hope you enjoy making this one - again and again. —Smiley Davies

What You'll Need
Ingredients
  • Dates, Walnuts, Coconut oil, Mint leaves, Table salt
  • 1 cup Dates, pitted
  • 1 1/2 cups Walnuts, shelled
  • 1 tablespoon Coconut oil, unrefined and melted
  • 1 pinch Table salt
  • 5 Mint leaves, fresh
  • Bananas, Mango chunks, Greek yogurt, Mint leaves, Granulated sugar, Coconut oil, Table salt
  • 4 Bananas, thinly sliced and frozen
  • 1 1/2 cups Mango chunks
  • 1/2 cup Greek yogurt
  • 15 Mint leaves, fresh
  • 2 tablespoons Granulated sugar
  • 4 tablespoons Coconut oil, unrefined and melted
  • 1 pinch Table salt
Directions
  1. Dates, Walnuts, Coconut oil, Mint leaves, Table salt
  2. In a 9x9 inch bake pan, line with parchment paper cross wise with flaps over the edges for easy movement after the freezing step.
  3. In a food processor, add in dates, walnuts, coconut oil, table salt and mint leaves. Process for about 40 seconds to a minute till everything comes together. The end result should be mushy and slightly coarse. This will be the crust.
  4. Pour the processed mixture into the lined pan and spread evenly in the pan with your fingers or the bottom of a measuring cup..
  5. Put aside for next step.
  1. Bananas, Mango chunks, Greek yogurt, Mint leaves, Granulated sugar, Coconut oil, Table salt
  2. In the same food processor, add in bananas, mangoes, yogurt, 12 mint leaves, sugar and salt. Process until everything comes together forming a slurry. While the processor is on, slowly pour in coconut oil to create a creamy texture.
  3. Pour processed contents onto the crust and spread evenly with a spatula.
  4. With the remaining 3 mint leaves, chop thinly and top the mixture.
  5. Place the bake pan in freezer for 2-3hrs to form.
  6. After freezing, remove the contents using the paper flaps onto a flat surface and cut out 16 even squares for easy serve. Then place back in pan to maintain form.
  7. And Serve.
