A flavorful pasta salad with bowtie pasta, Kalamata olives, artichokes, sundried tomatoes, and topped with a balsamic dressing, and freshly grated Parmesan cheese. Perfect for summer BBQ's, picnics, and pot lucks. —Dash of Amy

Ingredients
  • Pasta Salad
  • 16 ounces bowtie pasta
  • 1 cup kalamata olives, halved
  • 1/2 cup oil packed sundried tomatoes, chopped
  • 14 ounces can artichoke hearts, chopped
  • 1/2 cup pine nuts
  • 2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 12 fresh basil leaves, chopped
  • 1/4 cup freshly grated Parmesan cheese
  • 2-3 tablespoons balsamic glaze
  • Balsamic Dressing
  • 1/4 cup olive oil
  • 1/4 cup balsamic vinegar
  • 2 cloves garlic
Directions
  1. Pasta Salad
  2. Cook the pasta according to package directions; strain it and place in a large mixing bowl.
  3. Add the remaining ingredients except the Parmesan cheese, and balsamic glaze.
  1. Balsamic Dressing
  2. Whisk ingredients together until blended and thickened.
  3. Pour over the pasta salad, and then drizzle the top with balsamic glaze.
  4. Sprinkle fresh Parmesan cheese over the top.

Becoming my go-to pasta salad. Hearty robust flavors hold up well to ribs or burgers. Very good! Added halved grape tomatoes for a fresh bust of flavor. Very good; highly recommend trying!

Made this last night for a family picnic. Loved by all, even the non-olive eater. Only change we made was to toast the pine nuts. Perfect summer meal or side dish.
