After a cold Chicago winter, I'm ready for some lighter fare. Spring time can still be quite chilly. This grain salad is hearty enough to fight the spring chill but with lighter flavors to transition from winter. —AmiJoy

Ingredients

1/2 cup
Wild Rice, prepared and chilled

1/2 cup
Cottage Cheese
-
1/4 cup
Edamame
-
Sliced Beets
-
1/2
Orange slices
-
Bacon crumbles
-
Micro Greens
-
Pistachios
Directions

Prepare the wild rice according to package instructions and chill. Ideally, make this the day ahead so that it is cooled and faster to assemble the salad.

Start with 1/2 cup wild rice in the bottom of a bowl. Add 1/2 cup cottage cheese to one side.

Add sliced oranges, beets, edamame and micro greens around the bowl.

Sprinkle bacon crumbles and pistachios on top. Enjoy!
