A simple weeknight chicken dinner with a sticky-sweet honey garlic sauce. I like to serve this over greens mixed with rice or mashed sweet potatoes.

If you don't have an Instant Pot or slow cooker, just whisk the sauce together and coat the chicken with it. Nestle the chicken in an oven-proof skillet or Dutch oven and bake at 425° F for 20 minutes. —Posie (Harwood) Brien

Ingredients
  • 1 pound boneless, skinless chicken thighs
  • 4 garlic cloves, minced
  • 1/3 cup honey
  • 3 tablespoons ketchup
  • 1/2 cup soy sauce (low sodium is ideal)
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon dried oregano
  • 1 tablespoon toasted sesame seeds
  • 1 bunch scallions, thinly sliced
Directions
  1. Mix together the minced garlic, honey, ketchup, soy sauce, vinegar, and oregano. Pour the mixture over the chicken and stir to coat it well.
  2. Add the chicken to a slow cooker or pressure cooker (like an Instant Pot). (If you don't have one, see the recipe note above).
  3. Seal and cook for 3 hours on high, if using a slow cooker, or 20 minutes at high pressure if using a pressure cooker, then release the pressure manually.
  4. Top with the sesame seeds and scallions for garnish.

I made this last night with the halved soy sauce recommendation, and it was pretty good. The sauce is thin if you use the Instant Pot, so I recommend adding in a roux with a tablespoon of cornstarch and using the Saute function to boil and thicken the sauce.

Made this last night in my Dutch oven, used rice wine vinegar since that’s what I had on hand. And based on other comments cut soy to 1/3 cup and did rest water. It was really good, whole family liked it.

I followed the recipe exactly except I used half the soy called for. Sorry, Posie, I really thought this was awful. It was much too salty. Also, the garlic was overpowering and I love garlic. Hubby didn't like it either.

I gather the vinegar is added with the other ingredients making up the sauce that is then poured over the chicken?

I tripled this recipe. I ran out of soy sauce so I used 1/2 c. water and 1 c soy sauce. It was so good. My family loved it! I had a little bit left over and it tasted even better the next day. Great recipe.
