I grew up with my mom making big batches of delicious food to take to her friends and co-workers. She worked with mostly men, so she always chose to bring good, hearty food. I remember her making these mini quiches with ham, sausage or bacon — whatever we had on hand. They must’ve been popular because she made them the most! —My Stir Crazy Kitchen
cup cheddar, shredded
cup ham, diced
salt & pepper, to taste
Whisk eggs & milk together. Season with salt & pepper.
Pour into the mini-muffin tin, filling only half of each.
Drop in chopped ham and top with shredded cheese.
Bake at 350F for 10-12 minutes.
