Author Notes: I grew up with my mom making big batches of delicious food to take to her friends and co-workers. She worked with mostly men, so she always chose to bring good, hearty food. I remember her making these mini quiches with ham, sausage or bacon — whatever we had on hand. They must’ve been popular because she made them the most!My Stir Crazy Kitchen

Serves: 4

  • 6 eggs, whisked
  • 2 Tbsp milk
  • 1 cup cheddar, shredded
  • 1/3 cup ham, diced
  • salt & pepper, to taste
  1. Whisk eggs & milk together. Season with salt & pepper.
  2. Pour into the mini-muffin tin, filling only half of each.
  3. Drop in chopped ham and top with shredded cheese.
  4. Bake at 350F for 10-12 minutes.
