Simple and delicious meatballs made with grass fed ground beef, organic jasmine rice, and veggies cooked in a tomato juice based sauce. —Dash of Amy
Ingredients
- Meatballs

1 pound
grass fed ground beef

2 cups
cooked jasmine rice (or brown rice)

celery stalk, sliced thin

small onion, finely chopped

2 teaspoons
yellow mustard

egg
-
1 teaspoon
salt

1/2 teaspoon
black pepper
- Sauce

64 ounces
tomato juice

1 tablespoon
olive oil

1/2 teaspoon
oregano

1 teaspoon
chili powder
-
1/2 teaspoon
cumin
-
1 teaspoon
garlic powder

2 teaspoons
honey or molasses

1 teaspoon
salt

1/2 teaspoon
black pepper
Directions
- Meatballs

Mix all meatball ingredients together in a large mixing bowl; use your hands to get everything well mixed.

Shape into meatballs and place on a plate.
- Sauce

Place all sauce ingredients in a large pot and bring to a boil over medium heat.

Once boiling, reduce heat to a light simmer, and carefully drop the meatballs into the sauce.

Shake the pan gently, but don't mix the meatballs for at least 10 minutes because they are very delicate.

Cook them a total of 30 minutes, and mix very carefully after the initial 10 minutes.

**This recipe can also be made in a crock pot. Place the meatballs in first, then pour in the sauce ingredients, and cook on low 4-6 hours.
