My family’s in love with quinoa, so it's not questionable that my mom has come up with many recipes that call for these healthy seeds. And her quinoa fried rice just happens to be my absolute favorite. That’s why today mama and I are sharing this amazing recipe, because everyone deserves a great bowl of quinoa happiness!

Ingredients

1 teaspoon
olive oil.

eggs, whisked.

medium carrots, peeled and diced.

small white onion, diced.

cloves garlic, minced.

4 cups
cooked quinoa

3
green onions, thinly sliced.

3-4 tablespoons
soy sauce, or more to taste.

2 teaspoons
oyster sauce (optional).

1/2 teaspoon
toasted sesame oil.
Directions

In a pan over medium heat, add ½ tsp olive oil. Add the eggs and scramble slightly with a pinch of salt and pepper (optional), until barely cooked. Remove from a pan and put it into a bowl. Set aside.

Pour ½ tsp olive oil in medium heat. Add onion, carrots, peas, and garlic. Sauté for about 5 minutes or until the onion, peas, and carrots are soft. Then, add the cooked quinoa (how to cook Quinoa), green onions, soy sauce, and oyster sauce and stir-fry until incorporated, about 2 minutes.

Add in the eggs and stir to combine. Finally, add the sesame oil, and remove from heat.
