Blue Cheese Stuffed Grilled Flank Steak

Flank steak has a ton of that great beef flavor but can be tough, so it’s best not to over cook them. In this recipe, the steak is so tender you can actually cut it with a fork and the flavors and juices are locked in by searing it on the grill. The Blue Cheese-Roasted Garlic-Pepper filling only adds to the savory flavors of this dish. We cut the calories and added creaminess by using Whipped Cream Cheese mixed with Blue Cheese. —Amy Fuson

What You'll Need
Ingredients
  • 1 pound Flank Steak
  • 1 Head of Garlic
  • 2 ounces Blue Cheese
  • 2 tablespoons Whipped Cream Cheese
  • 2 Serrano Peppers
  • 1 Head of Garlic
  • 1 tablespoon Olive Oil
  • 1 teaspoon Ground Black Pepper
  • Salt and Pepper to taste
Directions
  1. Roast Garlic: Preheat Oven to 350. Cut top of Garlic and remove white "garlic paper". Place in Foil and add 1 tablespoon Olive Oil and 1/2 Tablespoon Ground Black Pepper on top of Garlic. Seal foil tightly. Place in oven and bake for one hour. (this step can be done in advance). You are going to use 1/2 Tablespoon of the roasted Garlic for this recipe.
  2. 40 minutes before ready to cook steak. Slice Serrano Peppers (only use peppers if you want a spicy mixture) Mix together Blue Cheese, Cream Cheese and sliced Serrano peppers. Wrap in Saran Wrap make roll about as wide as the Flank Steak. Place in Freezer for 30 minutes no more than 45 minutes
  3. Bring Steak to room temp 30 minutes to one hour. Wrap the flank steak loosely in plastic wrap and place on cutting board. Start to pound the steak using the smooth side of the meat-mallet. Pound the steak until it’s about 1/4 of an inch thick.
  4. Start Charcoal or gas Grill. Make sure the grill grates are super HOT!
  5. Spread 1/2 Tablespoon of Roasted Garlic on inside part of Steak (add more or less Roasted Garlic depending on your love of Roasted Garlic!!!)
  6. Remove Cheese Mixture from Freezer and take out of the saran wrap. Place the Cheese Mixture on the Steak and Roll the Steak around the cheese. You can tie steak or use tooth picks to secure the steak roll
  7. Salt and Pepper the outside of the steak.
  8. Grill the Steak. Place on Hot grill grates and get a Char on all sides. Then Place a piece of Foil on the grill. Fold the Foil so it is like a bowl. Large enough for the steak to easily fit into the foil. This ensure you don't lose any of that wonderful cheese. And you will already have a char on all sides of the steak
  9. Use a Meat Thermometer to ensure your steak is cooked to the temperature you want. We like out steaks at Medium.
  10. Open a bottle of wine. Actually this should be step one!!!
  11. When the steak is at the temp you want remove from grill. Let it rest for a few minutes to ensure you get all those great juices!!!
  12. Slice in pinwheels. ENJOY!!!!!
