A loaded pasta salad with penne pasta, broccoli, kalamata olives, red onions, grape tomatoes, and mozzarella balls, topped with a homemade balsamic vinaigrette. —Dash of Amy

  • Serves 10
Ingredients
  • Pasta Salad
  • 16 ounces penne pasta
  • 1 bunch broccoli florets, cooked
  • 1 cup grape tomatoes, sliced in half
  • 1 cup kalamata olives, sliced in half
  • 1/2 red onion, finely chopped
  • 8 ounces mozzarella pearls
  • 10-15 fresh basil, finely chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Balsamic Vinaigrette
  • 1/3 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons balsamic glaze, divided
  • 1 teaspoon dijon mustard
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 garlic cloves, minced
  • 1-2 tablespoons balsamic glaze

Directions
  1. Pasta Salad
  2. Cook the pasta according to package directions and place in a large mixing bowl.
  3. Add the remaining ingredients to the pasta, and mix well.
  1. Balsamic Vinaigrette
  2. Whisk all dressing ingredients except balsamic glaze together in a mixing bowl using a fork until it thickens.
  3. Pour over the salad, and mix well.
  4. Drizzle balsamic glaze over the whole pasta salad, or each individual portion.
