Rice flour and oat bran add to the texture of this bread. The six spice blend adds a warm, earthy flavor that complements the sweetness. —Jim Kennedy

rice flour

oat bran

4 teaspoons
baking powder

baking soda

kosher salt

cinnamon

mashed bananas (3-4)

1 1/2 cups
cane sugar

1 cup
buttermilk

melted butter

large eggs

1 1/2 teaspoons
vanilla extract
Directions

Preheat oven to 350°. Grease (2) 8x4" pans, add parchment to bottom of pans, grease.

In a medium bowl, add flours, oat bran, baking powder, baking soda, salt, cinnamon, and spice blend. Whisk together.

In a medium bowl, mash bananas. Add to mixing bowl and whisk on low speed for 1 minute to eliminate lumps

Add sugar, milk, butter, eggs, and vanilla extract. Whisk for 1 minute. Swap in paddle attachment.

Add dry ingredients, mix for 1-2 minutes until batter is smooth.

Pour into loaf pans, bake for 40-45 minutes or until toothpick comes out smooth.

Cool on wire rack for 5 minutes. Remove from pans, cool for an hour before serving.
