Gluten-Free Banana Bread

Rice flour and oat bran add to the texture of this bread. The six spice blend adds a warm, earthy flavor that complements the sweetness. —Jim Kennedy

What You'll Need
Ingredients
  • 2 cups gluten-free flour
  • 1 cup rice flour
  • 1/4 cup oat bran
  • 4 teaspoons baking powder
  • 2 teaspoons baking soda
  • 1/2 teaspoon kosher salt
  • 2 teaspoons cinnamon
  • 2 teaspoons six spice blend (https://food52.com/recipes...)
  • 2 cups mashed bananas (3-4)
  • 1 1/2 cups cane sugar
  • 1 cup buttermilk
  • 3/4 cup melted butter
  • 3 large eggs
  • 1 1/2 teaspoons vanilla extract
Directions
  1. Preheat oven to 350°. Grease (2) 8x4" pans, add parchment to bottom of pans, grease.
  2. In a medium bowl, add flours, oat bran, baking powder, baking soda, salt, cinnamon, and spice blend. Whisk together.
  3. In a medium bowl, mash bananas. Add to mixing bowl and whisk on low speed for 1 minute to eliminate lumps
  4. Add sugar, milk, butter, eggs, and vanilla extract. Whisk for 1 minute. Swap in paddle attachment.
  5. Add dry ingredients, mix for 1-2 minutes until batter is smooth.
  6. Pour into loaf pans, bake for 40-45 minutes or until toothpick comes out smooth.
  7. Cool on wire rack for 5 minutes. Remove from pans, cool for an hour before serving.
