Bean & Beef Chimichangas With Cilantro Cream Sauce

Start with a flour tortilla, add refried beans, seasoned beef, avocados, and cheese. Wrap it up, and fry it until golden brown, and drizzle some zesty cilantro cream sauce over the top. —Dash of Amy

Ingredients
  • Chimichangas
  • 16 ounces can refried beans
  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 2 tablespoons taco seasoning
  • 1 cup onion, finely diced
  • 2 avocados, diced
  • 1 lime juiced
  • 1 cup shredded Mexican cheese
  • 4-6 tablespoons olive oil for frying
  • Cilantro Creme Sauce
  • 3 garlic cloves
  • 1/2 jalapeno pepper, sliced
  • 1 bunch fresh cilantro leaves
  • 1 teaspoon salt
  • 1 cup sour cream
Directions

  2. Scoop beans into a bowl and mix until creamy.
  3. Heat a skillet over medium heat, add olive oil and ground beef.
  4. Add the taco seasoning, mix well, and cook for about 2 minutes.
  5. Add the onions, and cook until the beef is done, stirring often. Remove from heat.
  6. Place the chopped avocado in a small bowl, squeeze the lime juice over it, and sprinkle with 1/2 tsp salt.
  7. Spread a spoonful of beans in the center of a tortilla, top with 1-2 tbsp of the beef mixture, then a scoop of avocado, and last a tbsp of cheese.
  8. Roll the two sides over the filling sealing it in, then roll up the top and bottom pieces to completely cover the filling.
  9. Place seam side down in a heated skillet with 1-2 tbsp of olive oil.
  10. Cook until golden brown on both sides.

  2. Place garlic, jalapeno pepper, and cilantro in a food processor and mix until finely chopped.
  3. Add the salt and sour cream and mix on high until creamy. Transfer to a small bowl.
  4. Serve sauce on top of the chimichangas.
