butter

garlic cloves, minced

1/2 cup
fresh cilantro, chopped
- Rice & Beans

1 cup
jasmine rice
-
2 cups
water

butter

1/2 cup
onion, finely chopped

garlic cloves, minced

can pinto beans, drained & rinsed

1 teaspoon
salt

1/4 teaspoon
black pepper

fresh cilantro, finely chopped
Directions
- Chicken

Heat a large skillet over medium heat, and add butter.

Once butter is melted add the chicken and seasonings.

Add the garlic and mix well. Cook until chicken is done, then sprinkle with fresh cilantro, and set aside.
- Rice & Beans

In a small saucepan place the rice and water, mix well and bring to a boil.

Reduce heat to retain a light boil and cook until all the liquid is absorbed, 10-15 minutes. Set aside.

Heat a medium saucepan over medium heat, and add butter.

Once butter melts, add the onion and cook for about 3-4 minutes until soft.

Add the garlic and mix well.

Add the pinto beans, cooked rice, and seasonings; mix well.

Stir in the fresh cilantro.

Serve the chicken over the rice and beans.
