Vegan Caesar Dressing

A delicious alternative to the typical caesar dressing, this creamy substitute is savory and perfect for any salad. I suggest using this dressing over a kale salad with additional veggies of your choice, and adding crushed cashews, crispy chickpeas or crushed up pita chips as "croutons" to the salad! —Through The Kitchen

What You'll Need
Ingredients
  • 1/2 cup raw cashews, soaked
  • 2/3 cup water
  • 1 teaspoon dijon mustard
  • 1 tablespoon olive oil
  • 1 tablespoon nutritional yeast
  • 2 teaspoons garlic powder
  • salt and pepper to taste
Directions
  1. Place cashews in a pot with water to cover, and bring to a boil. Once boiling, let the cashews simmer for at least 10 minutes to soften.
  2. Blend all ingredients in a high-speed blender, adjusting garlic powder, nutritional yeast, salt and pepper to taste. The amounts listed above are what I used
  3. I used this dressing over lacinato kale and chopped heriloom tomatoes. I also added vegan parmesan cheese (recipe: https://minimalistbaker.com/how-to-make-vegan-parmesan-cheese/).
  4. This dressing can be refrigerated for up to a week! You may need to add water as it thickens in the refrigerator.
