Simple and delicious, vegetarian and vegan black bean burgers with corn, salsa, cilantro, and spices. Fry them until crispy and serve with the burger fixings. —Dash of Amy

Ingredients

cans black beans, strained & rinsed

can corn, drained

large red onion, chopped in big pieces

bunch fresh cilantro

salsa

2 teaspoons
Sriracha sauce

1/2 teaspoon
Mrs. Dash chicken seasoning

1/2 teaspoon
chipotle seasoning (Frontera)

2 teaspoons
salt

1/2 teaspoon
black pepper

1 teaspoon
chili powder

1/2 teaspoon
cumin

1/2 cup
plain bread crumbs

cornmeal

olive oil
Directions

Place onions and cilantro in food processor and blend on high until finely chopped.

Add the black beans and blend until mostly blended and broken down.

Transfer to a large mixing bowl, and add the corn, salsa, and seasonings; mix well.

Add the bread crumbs and mix.

Put some cornmeal on a plate, shape the bean mixture into patties, and dip both sides into the cornmeal coating well.

Heat a large skillet over medium heat, and add olive oil and bean burgers.

Cook until browned on both sides, about 5 minutes per side.

Serve on a plate, or in a bun with all of the burger fixings.
