These cookies have a delicious honey nut flavour and are lightly scented with cinnamon. They have a crunchy texture and are quick and easy to make. Enjoy Honey Almond Cookies with a hot cup of tea or coffee or pop them in your lunchbox for a tasty snack. —Family Mess Hall
Preheat your oven to 175 degrees C / 325 degrees F.
In a bowl, place 175g of softened butter, 1/2 cup of white sugar, 1/2 cup of brown sugar and 1/4 cup of honey, one egg, 1/2 tsp of salt, 1/2 tsp of ground cinnamon, 1 tsp of vanilla extract and mix to combine.
Add 2 1/4 cups of self raising flour to form a soft crumbly ball of dough.
Roll into golf ball sized balls and place on a lined baked tray 5cm apart. Press each ball with three fingers to flatten a little.
Press in one whole almond into each cookie.
Bake for 12-15 minutes until very golden but not burnt.
