Yellow, green, and red peppers stuffed with a delicious combination of grass fed beef, onions, bread crumbs, and cheese. Baked and topped with fresh basil. —Dash of Amy
Ingredients

peppers, assorted colors, sliced in half, seeds removed (assortment of colors)

grass fed ground beef

onion, diced

1/2 cup
Italian bread crumbs

1/3 cup
dried Parmesan cheese

egg

garlic cloves, minced

2 tablespoons
tomato paste

1 1/2 teaspoons
salt

1/2 teaspoon
black pepper

bunch fresh basil, divided

2/3 cup
shredded mozzarella cheese, divided

1-2 cups
Marinara sauce

1/3 cup
fresh Parmesan cheese
Directions

Cut the peppers in half and pull out the seeds.

In a large mixing bowl combine the beef, bread crumbs, Parmesan cheese, 1/3 cup Mozzarella cheese, egg, tomato paste, garlic, salt, pepper, and half of the fresh basil.

Mix well, using your hands to get the mixture combined.

Place a heaping spoonful of the meat mixture into each pepper, pressing it down.

Place the stuffed peppers in a baking dish, pour the sauce evenly over the top, then sprinkle with the fresh Parmesan cheese and 1/3 cup of the Mozzarella cheese.

Cover with foil, and bake for 30 minutes at 400*.

Sprinkle the fresh Parmesan cheese and 1/3 cup of the Mozzarella cheese evenly over the peppers, cover again, and bake an additional 15 minutes.

Sprinkle the cooked peppers with fresh basil, and serve hot.
