Carrot Cake Pancakes with Maple Cream CheeseĀ Glaze

Author Notes: When I was challenged to teach kids how to use the carrots they grew for a local library demonstration where there is no kitchen, I got creative with my trusty griddle, my carrot cake recipe, and my tried-and-true simple pancake recipe. The results are the perfect merging of flavors, especially with the maple cream cheese glaze to top 'em off! They were PERFECT on my first try and have been making me happy ever since! You've got to try them! KitchAnnette | Annette Zito
