Author Notes
When I was challenged to teach kids how to use the carrots they grew for a local library demonstration where there is no kitchen, I got creative with my trusty griddle, my carrot cake recipe, and my tried-and-true simple pancake recipe. The results are the perfect merging of flavors, especially with the maple cream cheese glaze to top 'em off! They were PERFECT on my first try and have been making me happy ever since! You've got to try them! —KitchAnnette | Annette Zito

In a large bowl, whisk flour, baking powder, salt, brown sugar, and sugar. Add remaining ingredients and mix until well blended.

Heat and butter griddle then add small amounts of batter in the pancake size you desire. When edges start to come away and pinhole bubbles form, turn the pancake. In about a minute, take off the griddle and plate. Add a dollop of glaze and serve.
