This recipe is a classic. Made with just the right amount of almond flour to give it a nice rich nutty flavor along with the brown butter. Yum. Red gravinstiens make this apple compote complete. Topped with a oat Streusel and a sizzle of spiced glaze. Welcome to fall. —Megan Aldrich

What You'll Need
Ingredients
  • Apple compote
  • 375 grams Apples(red gravinstiens)
  • 50 grams Brown butter
  • 62 grams Brown sugar
  • 1 tablespoon Raw sugar
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Nutmeg
  • 1/2 teaspoon Cinnamon
  • 1/2 teaspoon Ground star anise
  • Muffin Base
  • 280 grams Soft unsalted butter
  • 1 cup Granulated sugar
  • 4 Eggs
  • 360 grams Sour cream
  • 450 grams AP flour
  • 1/2 cup Almond flour
  • 1 tablespoon Baking powder
  • 1 teaspoon Baking soda
  • 2 teaspoons Salt
Directions
  1. Apple compote
  2. Peel and dice your apples. Set aside. Brown your butter in a sause pan. Next add the sugars and salt until dissolved . In a separate bowl take the diced apples and spices and evenly incorporate. Next add apple mixture to heated butter. Cook for 10 minutes.
  1. Muffin Base
  2. In a KitchenAid mixer cream together butter and sugar until light and fluffy. Slowly incorporate eggs. Then alternate sour cream and dry ingredients until fully Incorporated
