Ingredients
  • Roasted Pepita Crumb Topping
  • 8 tablespoons butter, unsalted
  • 1/4 cup brown sugar
  • 1/4 cup granulated white sugar
  • 1 cup all-purpose flour
  • 3/4 cup rolled oats
  • 1/2 cup roasted pepitas, unsalted
  • Pink Pearl Apple & Thyme Filling
  • 4 pink pearl apples, cored and sliced
  • 1 tablespoon brown sugar
  • 1 tablespoon granulated white sugar
  • 1.5 teaspoons fresh thyme leaves
  • 1 tablespoon butter, unsalted
Directions
  1. Cream the larger quantities of butter and sugar together until pale brown, light, and fluffy.
  2. Mix in the all-purpose flour, rolled oats, and roasted pepitas until fully incorporated and crumbly, making sure to crush any chunks of butter that are too large by hand. Refrigerate until needed.
  3. In a separate bowl, combine the sliced pink pearl apples, thyme leaves, smaller quantities of sugar, and melted butter. Mix until all the apples are coated with the other ingredients.
  4. Transfer the apple filling into your desired baking dish and pack the crumb topping on top, making sure no filling can be seen.
  5. Bake for approximately one hour, or until the filling is soft and the crumb topping is a rich, golden brown.
  6. Enjoy!
  7. Serve warm as is or with a scoop of ice cream!
