Apple Spice Banana Bread or Autumn Banana Bread

This is a lovely Autumn Banana bread. It fills your house with the wonderful aroma of autumn baking. With layers of fresh apples and spices melding with banana makes for a delicious snack or dessert any time of day! —Jenny

What You'll Need
Ingredients
  • Apple Spice Mixture
  • 1/3 cup Brown Sugar, packed
  • 1/4 teaspoon each: cinnamon, nutmeg, cloves, ginger, all spice
  • 2 cups Apples, peeled, cored, chopped
  • Banana Bread Batter
  • 2/3 cup Brown Sugar, packed
  • 1 stick, Butter, softened
  • 2 Eggs, large
  • 1 1/2 teaspoons Vanilla Extract
  • 2 Ripe Bananas, mashed
  • 1 1/2 cups flour
  • 1 teaspoon each: cinnamon, nutmeg, cloves, ginger, all spice
  • 1 3/4 teaspoons Baking Powder
  • 1/2 cup Apple Sauce
Directions
  1. Preheat oven to 350 degrees.
  2. For Apple-spice Mixture: Combine all ingredients in a bowl and stir until combined.
  3. For Banana Bread Batter: In an electric mixer, Beat sugar and butter together in a bowl using an electric mixer until smooth and creamy. Beat in eggs, 1 at a time, until incorporated; add vanilla extract. Then add in two ripe bananas and mix.
  4. Combine flour, spices and baking powder together in a bowl; stir into creamed wet ingredients mixture. Mix applesauce into batter until smooth.
  5. Pour half the batter into the prepared loaf pan. Lightly pat half of apple mixture into batter. Pour the remaining batter over apple layer; top with remaining apples and brown sugar mixture. Lightly pat apples into batter.
  6. Bake for 60 minutes, checking to see if top is browning too much (if it is, place tin foil over top). If toothpick inserted does not come out clean at the 60 minute mark, check bread at 5 minute intervals until it comes out clean.

What size loaf pan do you recommend?

I have corrected the spice amount in the recipe. Instead of 1 tsp each of the spices, I have reduced it to 1/4 tsp each.

Thanks Jenny, that seems good, I did put 1 tsp total of all but cloves and it was fine; in fact I'd increase the cinnamon next time. I really like your idea and will make this again. Oh and you have white sugar in the instructions but not in the ingredients fyi.

Thank you! Yes that’s a typo. It was supposed to say brown sugar instead of white sugar in the instructions. I have it corrected now.

There are some typos in this recipe. I had already started putting this together when I saw reviews below. I 1) left out cloves altogether (personal taste), and all spices on apple spice mixture and in the batter changed brown sugar to white. I would change flour to 1-3/4 cup next time. I also put it in a bundt pan. Came out good.
