The pizza toppings are not only tomato sauce, sausage, cheese, pepper. You can use whatever you want. Don't forget that pizza may be a national dish of Italy, but Italy has no national pizza. So every pizza we make is tasted with the different ingredients we use in it. Since my son is a vegetarian, I cooked two pizzas, one with bacon and one without bacon. sugar or grape molasses
beetroot, cooked and mashed
black radish (large)
purple onion (big size)
cloves of garlic
Olive oil (for using on dough, as well as for caramelization of radishes and onions)
grape molasses (to make radishes and onions caramelized)

FOR THE DOUGH
Pls. put the beetroot juice, molasses and yeast into the bread machine, mix and wait for 10 minutes for adding flour. After kneading dough, wait 1,5 hours for fermentation. In the meantime, I've been dealing with preparing the top ingredients. Let's get the dough on the floured bench. To knead for a while and split it into two pieces.
First rinse the beets thoroughly with their shells and boil in water for about an hour. It is easily peeling. Put some olive oil in the pan and add crushed garlic followed by the chopped onion. You can add sugar or grape molasses for caramelization. Let's get the onions in a bowl.Add thin sliced raddishes into the pan. When they get a soft, light roasted, you can add one spoon of grape molasses for very light caramelization. Please pay attention to the detail of radish fine cut and not to burn or dry when roasted in oil.
We'll spread olive oil and sprinkle thyme over the dough. Let's place grated mozarella cheese, ring onions, some rosemary and radishes. Grated mozzarella, bacon and some olive oil on top of them.
Let's set the oven to 250 degrees. If you don't have a pizza block, turn the baking tray upside down and place it from the bottom to the second shelf and heat tray 30 minutes. At the end of the heating, let's cook the pizza 15 min. until the cheese melts. Then, enjoy the crispy and crunchy hot pizza.
