Roasted Curried Root Vegetables

Quick, healthy and easy. Add your favorite vegetables, mostly root vegetables, add curry and you have a hearty healthy side or main dish. Note: You can buy cleaned, cut root vegetable in a mix from places like Trader Joe's. —nbert

What You'll Need
  • Red Potatoes
  • Sweet Onions
  • Parsnips
  • Rutabega
  • Turnips
  • Sweet Potato
  • Carrots
  • Beets (optional)
  • Cauliflower (optional)
  • olive oil
  1. Put vegetables in a roasting pan or pans.
  2. Add curry powder liberally, as well as salt and pepper to taste and olive oil.
  3. Cook for about 30-45 minutes on 450 degrees, stirring every 15 minutes.

Love roasting a mix of root veggies, but never thought to toss them in curry. Will try it next time!
