Wanted to post something for my vegetarian friends before leaving for San Francisco tomorrow. Quite excited to go to my first Foodbuzz Festival. Will tell you all about it when I come back.
I have noticed lately that everyone is making spaghetti squash and I did not want to be left behind.
I had to make a platter of veggies for my client and this is what I did.
Not going into recipe because its quite easy. I baked the squash for over an hour and let it cool. I had purchased cubanelle peppers, scallions, onions, garlic, eggplant, string beans, zucchini and baby Bella mushrooms.
I sauteed the veggies with olive oil, sesame oil and garlic the added a touch of vino because the rest of the bottle was for me.
That is it! Quick and easy and some of the veggies I left "al dente".
