Roasted Japanese Yams

This is a vegan-friendly side dish that'll have you going back to seconds! —Sara

  • Prep time 15 minutes
  • Cook time 40 minutes
  • Serves 5
Ingredients
  • 3 pounds Japanese Yam (about 3 large ones)
  • 1.5 tablespoons Olive Oil
  • 1/2 teaspoon Garlic Powder
  • 1/2 teaspoon Onion Powder
  • Salt and Pepper

Directions
  1. Preheat the oven to 415 degrees Fahrenheit and line a baking sheet with parchment paper.
  2. Peel and chop up your yams into similar sized cubes.
  3. Place in a bowl and mix in the olive oil and seasonings.
  4. Keep mixing till evenly coated and place on the baking sheet.
  5. Bake for 30-35 minutes (flip halfway through) and broil for 1-2 minutes.
  6. Let cool and serve immediately or store in a glass container.
