Inspired by the 1942 Hollywood classic, Casablanca, this riff on a mojito strikes the perfect balance of the herbs, citrus, and spices you can find in Moroccan cooking—like mint, cinnamon, and tamarind. The film is set in—you guessed it—Casablanca, Morocco, during the early 1940s and this refreshing, bubbly libation would feel right at home at the ever-bustling Rick’s Café Americain. —Food52

Directions

Muddle mint and simple syrup in the bottom of a shaker. Add rum, Cointreau, lime, tamarind concentrate, and a pinch of cinnamon. Add ice, shake, and double strain over ice. Top with club soda and stir to combine .
