Blueberry Grown Up Grilled Cheese

This elevated grilled cheese will change the way you think about the common comfort food. Move over, kraft singles and tomato soup, there's a new melty cheese game in town. —Bow Hill Blueberries

What You'll Need
Ingredients
  • 2 pieces artisan bread
  • 1 tablespoon butter
  • 1 teaspoon Dijon mustard
  • 1 handful arugula
  • Thin slices of red onion, soaked in pickled blueberry brine
  • 1/4 cup Bow Hill Organic Heirloom Pickled Blueberries
  • 4 ounces chèvre
  • Splash Balsamic vinegar
  • 1 pinch salt
  • 1 dash pepper
Directions
  1. Butter slices of artisan bread, placing one into a skillet heated to medium.
  2. Smear Dijon mustard, and layer chèvre, pickled blueberries, onion slices and arugula.
  3. Decorate with salt and pepper.
  4. Drizzle with balsamic vinegar.
  5. Close the sandwich with the other slice of bread, butter side out.
  6. Grill until golden brown, flip, and cook until berries squish and cheese melts.
  7. Cut in half and devour.

Love this recipe! So much! I gave my dear friends from North Carolina a jar of the pickled blueberries when they visited me on the Puget Sound and pointed them in the direction of this recipe. They were also huge fans of it. MmmmMmmm, pickled blueberries and goat cheese are seriously a match-made-in-heaven.
