Blueberry Steel Cut Oats

If time is an issue, make old-fashioned or quick oats. Just cook the oats as you normally would using the same ingredients, but subtracting half cup water or milk. —Bow Hill Blueberries

  • 1 cup steel cut oats
  • 1 cup milk of choice – we use whole cow's milk
  • 2 cups water
  • 2 tablespoons Bow Hill Organic Heirloom Blueberry Powder
  • 2 tablespoons Bow Hill Organic Heirloom Dried Blueberries
  • 1/2 teaspoon kosher salt
  • cinnamon to taste
  • 1/2 teaspoon vanilla
  • Optional Ingredients
  • 1 pat butter
  • splash of milk
  • chopped almonds
  • frozen blueberries
Directions
  1. Combine oats, milk, water, salt, blueberry powder, dried blueberries and cinnamon in a medium saucepan.
  2. Bring to a boil, then reduce heat to low.
  3. Simmer uncovered for 15 to 20 minutes until desired thickness, stirring occasionally.
  4. Remove from heat and let cool slightly.
  5. Divide equally between four bowls (or save for the week's breakfasts).
  6. Optional steps: add butter and slash of milk, if going that route. For extra nutrients, top with organic frozen blueberries, more dried blueberries, and organic almonds.
