Honey Lemon Cookies

This is not your average sugar cookie... I have been making these for over 40 years.
It is an excellent roll out cookie, but it also works well in a cookie press. Any flavor of extract can be used. —Miss_Karen

What You'll Need
Ingredients
  • 1/3 cup Butter, softened
  • 1/3 cup Granulated Sugar
  • 1 Large Egg
  • 2/3 cup Honey (I prefer to use orange blossom or wild flower. But blackberry honey is delicious too.)
  • 1 teaspoon Lemon Extract
  • 2 3/4 cups All Purpose Flour
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Salt
Directions
  1. Cream butter and sugar until it’s light and fluffy. Add honey, egg and extract. Sift dry ingredients together, mix well.
  2. Cover and chill the dough about 1 hour.
  3. Pre heat oven to 375° F.
  4. on a lightly floured board, roll dough out 1/4 inch thick. Cut into desired shapes with cookie cutters. Place on a parchment lined cookie sheet, and sprinkle with colored sugar.
  5. Bake 8 - 10 minutes or until no imprint remains when lightly touched. All cookies continue to cook as they cool. These are supposed to be just set and tender.
  6. * * People are reluctant to try these, because they look like ho hum sugar cookies. However, once they try them, these cookies don’t stick around very long.
  7. If you would like to make these 3 dimensional: Cut a vertical slit between two points on each star to just above the center; spread dough apart to form a 1/4-in. opening. Assemble by placing two stars together at slits.

I didn’t like these cookies. Maybe it’s too much honey in the recipe, but the texture and taste were both uninteresting and we ended up not eating them.

I'm sorry you didn't care for these. Sugar cookies in general are not overly exciting. The honey makes them different....
