I'm a huge kale fan. Raw with salad dressing or sauteed with garlic and mustard. I love it. This slightly sweet version uses mirin to help soften the kale. I found it to be a lovely side for an Asian flavored meal. —Brussels Sprouts for Breakfast
Ingredients

bunch kale (lacinato or any other)

cloves garlic (minced)

1/4 teaspoon
red pepper flakes

mirin

salt and pepper

Directions

Remove stems from the kale, and give it a rough chop. You want equal-ish size pieces that are easy to stab with a fork.

Add olive oil to a saute pan and heat over medium. Add garlic, and let cook for just 30 seconds to a minute before adding the kale. Add kale, salt, pepper and crushed red pepper flakes, and toss to coat in the oil. Let cook for 2-3 minutes.

Add mirin to the kale, and let cook over medium-low heat for about 5 minutes. Remove from heat and serve with your favorite Asian-inspired meal! (rice bowls, salmon teriyaki, alone!)
