Author Notes

Tempeh is one of those hit-or-miss ingredients -- if you don't cook it right, it really won't taste good because of its natural bitterness. On the other hand, if you fail to perfectly season/cook your beans or tofu, it's generally okay as they have a pretty neutral flavor. But tempeh requires a little more thought and preparation before cooking it. Luckily I've saved you the "thought" process with this simple recipe for smoky tempeh. It takes sandwiches, wraps, and salads to a whole other level! —Ellie

What You'll Need
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon ketchup
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon liquid smoke
  • 8 ounces block of tempeh
  • 4 slices of whole grain bread
  • 4 tomato slices
  • 4 lettuce leaves
  • 1 avocado
  • condiments of choice (mustard, mayo, salt & pepper, etc.)
  1. Mix together soy sauce, rice vinegar, ketchup, garlic powder, paprika, and liquid smoke in a large bowl or dish for marinating. Set aside.
  2. Thinly slice tempeh into strips. Place in marinade and let sit for at least 30 minutes, the longer the better. Save any leftover marinade.
  3. Once the tempeh has marinated, air fry at 325°F for 10-15 minutes, checking to make sure it’s not burning. Baking will take longer, probably 10-15 minutes on each side.
  4. If you have leftover marinade, you can coat the tempeh strips in this for extra flavor.
  5. Toast bread slices if desired. Slice or mash avocado and assemble each sandwich with 1/2 the avocado.
  6. Place lettuce, tomatoes, and tempeh slices on top. Add any additional condiments as desired, then top with bread slice. Enjoy!

Use less soy sauce, a little salty, but still good and crispy. Consider air frying at lower temperature so that the middle gets cooked a little more.
