Vegetarian Chili with Beans and Veggie Crumbles

Healthy one pot vegetarian chili with beans and veggie crumbles.


Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 1 medium green pepper chopped
  • 1 red mini pepper chopped
  • 1 orange mini pepper chopped
  • 1 yellow mini pepper chopped
  • 1 pinch salt
  • 1 12 oz package of Morningstar Farm Grilled Crumbles
  • 2 tablespoon chili powder
  • 1/2 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • 1 pinch red pepper flakes (to taste)
  • 1/2 teaspoon Super Veg
  • 1 packet Sazon Goya
  • 1 15.5 oz canned black beans drained
  • 1 15.5 oz canned kidney beans drained
  • 1 15.oz canned tomato sauce
  • 1 8 oz canned tomato sauce
  • 1/2 teaspoon agave
  • 1 tablespoon ketchup
  • 1 piece scallions
  • 4 sprig cilantro

Directions

  • Step 1

    Add oil to a large soup pot and place over medium-high heat. Heat oil for 2 minutes.

  • Step 2

    Add onion and peppers and pinch of salt. Cook for 4 minutes until softened but not brown.

  • Step 3

    Add Morningstar Farms crumbles and cook for 6 minutes.

  • Step 4

    Stir in chili powder, paprika, garlic powder, onion powder, cumin, red pepper flakes, super veg, sazon and cook for 2 minutes until fragrant. Stir constantly.

  • Step 5

    Add black beans, kidney beans and tomato sauce. Cook on low for 20 minutes. Stir occasionally.

  • Step 6

    Remove from heat and stir in agave and ketchup.

  • Step 7

    Garnish with scallions and cilantro (optional)

  • Step 8

    *If you cannot find super veg, you can use salt to taste.
