Vegetarian Chili with Beans and Veggie Crumbles

What You'll Need
Ingredients
  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 1 medium green pepper chopped
  • 1 red mini pepper chopped
  • 1 orange mini pepper chopped
  • 1 yellow mini pepper chopped
  • 1 pinch salt
  • 1 12 oz package of Morningstar Farm Grilled Crumbles
  • 2 tablespoons chili powder
  • 1/2 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • 1 pinch red pepper flakes (to taste)
  • 1/2 teaspoon Super Veg
  • 1 packet Sazon Goya
  • 1 15.5 oz canned black beans drained
  • 1 15.5 oz canned kidney beans drained
  • 1 15.oz canned tomato sauce
  • 1 8 oz canned tomato sauce
  • 1/2 teaspoon agave
  • 1 tablespoon ketchup
  • 1 piece scallions
  • 4 sprigs cilantro
Directions
  1. Add oil to a large soup pot and place over medium-high heat. Heat oil for 2 minutes.
  2. Add onion and peppers and pinch of salt. Cook for 4 minutes until softened but not brown.
  3. Add Morningstar Farms crumbles and cook for 6 minutes.
  4. Stir in chili powder, paprika, garlic powder, onion powder, cumin, red pepper flakes, super veg, sazon and cook for 2 minutes until fragrant. Stir constantly.
  5. Add black beans, kidney beans and tomato sauce. Cook on low for 20 minutes. Stir occasionally.
  6. Remove from heat and stir in agave and ketchup.
  7. Garnish with scallions and cilantro (optional)
  8. *If you cannot find super veg, you can use salt to taste.
