This is a recipe I came up with while raising my children and working on an organic farm. This is a beet recipe that was requested time and time again from children to adults. It is the perfect balance of sweet and salty with a bright tanginess from the balsamic and feta. If you are vegan, leave out the feta. The star of the show is fresh beets, greens and dill. A dash more of balsamic is wonderful depending on your taste. —Heather

Separate your beet roots and greens. Scrub the roots and rinse the greens thoroughly.
Drain the beets and greens. Transfer to a heat safe bowl. Toss with olive oil, balsamic vinegar, dill, feta, salt and pepper to taste. Let sit for atleast 10 minutes for flavors to blend.
