This is a recipe I came up with while raising my children and working on an organic farm. This is a beet recipe that was requested time and time again from children to adults. It is the perfect balance of sweet and salty with a bright tanginess from the balsamic and feta. If you are vegan, leave out the feta. The star of the show is fresh beets, greens and dill. A dash more of balsamic is wonderful depending on your taste. —Heather
Ingredients

2 pounds
Beets with tops

3 tablespoons
Olive Oil

1.5 tablespoons
Balsamic vinegar

2 tablespoons
Dill

1/4 cup
Feta cheese
Directions

Separate your beet roots and greens. Scrub the roots and rinse the greens thoroughly. Cut the roots into 1 inch cubes and chop the greens into 2 inch strips.

Steam the beet roots for 15 minutes. Turn off the heat and add the greens for 5 minutes more.

Once steamed transfer to heat proof bowl. Toss with olive oil, balsamic, dill, feta. Add salt and pepper to taste.
