Pistachio Mango Baby Arugula Salad

Author Notes: This salad has a delightfully light crunch , succulent sweetness and slightly salty note to complement the peppery arugula. Enjoy! Karen

  • 2 cups Baby arugula
  • 2 tablespoons Matchstick fennel slices
  • 2 tablespoons Crumbled feta cheese
  • 2 tablespoons Shelled pistachios
  • 1/4 cup Diced mango

Salad Dressing

  • 3 tablespoons Olive oil
  • 2 tablespoons Red wine vinegar
  • 2 tablespoons Orange juice
  • 2 tablespoons Diced mango
  • 1 dash Salt

  1. Take your pre-washed baby arugula and assemble it in a pile in the center of a plate, sprinkle with Pistachios, feta cheese, and fennel , and top with diced mango
  2. Salad dressing-place all ingredients in a blender , pour into small bowl and serve aside the salad
