Melon, Cucumber & Corn Salad

This salad is all about summer produce at it's best. Tossed with a honey vinaigrette dressing by Southern Living and set up the picnic table. —Liz | inspired by the seasons

  • Prep time 15 minutes
  • Serves 4
Ingredients
  • Honey Vinaigrette by Southern Living
  • 1/2 cup Canola Oil
  • 1/3 cup White balsamic vinegar
  • 2 tablespoons Honey
  • 2 teaspoons Minced shallot
  • 1/4 teaspoon each salt and fresh ground pepper
  • Salad
  • 1 medium sized cucumber, peeled, seeded and cut into half circles (about 3/4c)
  • 2 cups Cantaloupe seeded and cut into bite sized pieces or use a melon baller for that fancy finish
  • 1 cup Cooked corn (about 1 ear)
  • 1/3 cup Feta Cheese, crumbled
  • 1 teaspoon fresh thyme leaves, chopped
In This Recipe
Directions
  1. Combine dressing ingredients in a lidded jar and shake until fully incorporated.
  2. Add salad ingredients to a medium sized bowl and add dressing, start with 2 T and add more to taste.
  3. Place in refrigerator one hour before serving or chill salad ingredients before prepping to serve immediately.
