This salad is all about summer produce at it's best. Tossed with a honey vinaigrette dressing by Southern Living and set up the picnic table. —Liz | inspired by the seasons

Ingredients
- Honey Vinaigrette by Southern Living

1/2 cup
Canola Oil

1/3 cup
White balsamic vinegar

2 tablespoons
Honey

2 teaspoons
Minced shallot

1/4 teaspoon
each salt and fresh ground pepper
- Salad

medium sized cucumber, peeled, seeded and cut into half circles (about 3/4c)

2 cups
Cantaloupe seeded and cut into bite sized pieces or use a melon baller for that fancy finish

1 cup
Cooked corn (about 1 ear)

1/3 cup
Feta Cheese, crumbled

1 teaspoon
fresh thyme leaves, chopped
Directions

Combine dressing ingredients in a lidded jar and shake until fully incorporated.

Add salad ingredients to a medium sized bowl and add dressing, start with 2 T and add more to taste.

Place in refrigerator one hour before serving or chill salad ingredients before prepping to serve immediately.
