Adapted from Martha Stewart's One-Pan Pasta. This "off road" version tones down the carbs and ups the veggies and protein! I wanted to layer flavors but keep true to in the one pan method which proved much easier than I anticipated. The possibilities are endless in terms of substitutions and additions but this is a good recipe to build off of in general. —aferroggiaro
Ingredients

sausage, uncased

red onion, sliced

garlic cloves, smashed

1 14 oz ounces
can whole tomatoes

zucchini, spiralized

salt
-
pepper
-
herbs to taste

grated Parmesan
Directions

1) Prep your ingredients- specialize the zucchini, slice the onion, smash the garlic

2) Heat the oil in a pan over medium and when hot add the uncased sausage and cook until all the pink is almost gone

3) Add onion, tomatoes (all juice), and smashed garlic

4) Season with salt, pepper, and herbs to your liking

5) Lower heat and let the flavors simmer as long as you like (minimum 20 min)

6) Turn up the heat and dd the zoodles and cook to your liking (at least 5 min)

7) Add parm and let it melt over the zoodles

8) Serve while HOT!
(and add more parm- you can never have enough)
